Jiminy!
The Exo PB and Jelly bar is made from crickets; or more strictly flour from ground crickets.

Exo’s mission is to normalize the consumption of insects as a sustainable food source.
We believe the way to accomplish this is through healthy, delicious food products that include
insects as an ingredient. Our protein bars are formulated to be the perfect introductory vehicle
to bring insect protein to the masses. (bold added)

BUT wait! There's more!
Bitty Foods are also making 'sustainable" cookies, quick-breads and pancakes. (link)
Bitty’s mission is simple: We make delicious foods with cricket flour. Cricket flour is a tasty source of sustainable nutrition, packed with protein, healthy fats and micronutrients. We start with sustainably raised crickets, which are slow roasted to bring out their nutty, toasted flavor. Then we mill them into a fine flour that becomes the basis of our delicious, high-protein baked goods and baking mixes.
WHY eat insects?
Because the UN says so! The Food and Agricultural Organization of the United Nations issued a report in 2013 (link- pdf) which explained why we should eat insects:
Insects promoted as food emit considerably fewer greenhouse gases (GHGs) than most livestock (methane, for instance, is produced by only a few insect groups, such as termites and cockroaches).Save the world from Greenhouse gases (GHGs). Eat insects.
But we still need the UN to explain why, although GHGs keep rising there has been no warming for 18 years.
